What is the Glycaemic Index?
The Glycaemic Index is a measurement of blood sugar levels after eating food.
All low GI diets are based on lowering blood sugar.

Higher GI foods cause blood sugar and insulin levels to rise. These will be mostly refined and processed foods, with some exceptions e.g. sugar, potatoes, white flour.
The body digests low GI foods slowly, creating a full feeling for longer.
One GI food added to a meal lowers the glycaemic index of the whole meal. All foods have a glycaemic index value. The glycaemic index range is as follows:
Low GI = 55 or less
Medium GI = 56 – 69
High GI = 70 or more

Foods only appear on the GI index if they contain carbohydrate. This explains why you won’t find foods like fresh meat, chicken, fish, eggs and cheese in GI lists.
